2018 was an important year for Nahm: legendary chef David Thompson handed the reins to Pim Techamuanvivit, the first female to take charge of the kitchen at Como Metropolitan Hotel’s flagship restaurant. Techamuanvivit turned to cooking professionally after leaving behind a career in Silicon Valley to open Kin Khao, her Michelin-star restaurant in San Francisco, in 2014.
Nahm’s authentic Bangkok food style hasn’t changed radically but the new chef has turned to Thai artisans and small-scale farmers and fishermen to source ingredients and showcase the best the country has to offer. The restaurant is a regular on both the World’s and Asia’s 50 Best, topping the latter back in 2014.
